Balsamic vinegar is a great sweet and sour condiment that can be used for salads, cheeses, meats as well as on vanilla ice cream and strawberries.

It can be made in many different ways - the most special and prestigious product is the Traditional DOP, made from only cooked grape must (crushed grape juice made from local grapes that is slowly boiled until it reaches half of its original volume) and aged for at least 12 years. The IGP Balsamic Vinegar, is made from cooked grape must as well as wine vinegar, and is aged for shorter undefined periods. There are many imitation products on the market that use the addition of caramel and other ingredients to achieve the viscous texture of the traditional aged product in a shorter time.
