The aged organic wine vinegar is extracted from centuries-old casks and is aged for a minimum of 12 years in French oak barrels along with balsamic vinegar that is aged through the “Decanter and Refill” system. This occurs when the vinegar is moved through a number of casks in order for each barrel to lend its aroma and flavor to the vinegar creating a unique and rich bouquet.
