Cognà is a recipe with very ancient origins prepared in the old Langa farmhouses, where at the end of summer the grape must from the first harvests was cooked slowly and enriched with quinces, Madernassa pears, walnuts, and hazelnuts to create a delicious compote to be enjoyed during the winter.
