The most special and prestigious product is the Traditional DOP, made from only cooked grape must (crushed grape juice made from local grapes that are slowly boiled until reaching half of its original volume) and aged for at least 12 years.  DOP (Denominazione di Origine Protetta - Protected Designation of Origin) balsamic vinegar is certified to ensure that the vinegar was locally grown and produced using traditional methods.

Balsamic vinegar enhances the flavor of the dish without adding sugar or salt to the meal. Balsamic vinegar is often used to aid in digestion and reduce the risk of heart disease and other diseases.
