Ingredients

1 large fennel (with green tips if possible)

3 oranges

3 tbsp taggiasca olives

¼ lb peeled almonds
-
2 tbsp EVOO
-
Salt and Pepper

Spring onion (optional)
Directions
Roast the almonds in the oven for about 3 minutes at 350°F, or until golden brown. Be careful not to burn! While still hot, coarsely grind in a mortar and pestle, or with a knife.
Finely chop the fennel and its green tips and place in a bowl. Peel the oranges using a knife, trying not to waste the fruit but taking away the white bitter outer layer. Slice the oranges, keep the juice and add to the bowl. Add olives, almonds, evoo, salt and pepper and mix well. For an extra kick you can add spring onions, finely chopped.
The salad can keep for up to one day, but is best when just made.
