Ingredients
600gr of cod fillets
Garlic
Lemon
Pepper
Salt
250gr bacon
Salicornia
A bunch of green asparagus
100gr butter
4 egg yolks
20gr lemon juice

Giusti White Condiment
Directions
Steam the cod fillet for 15 minutes by adding 2 lemon slices, a clove of garlic and peppercorns to the water.
- Brown the bacon in a skillet until crispy, always removing the fat.
- Clean the asparagus and boil it for 20 min.
- For the sauce, add the egg yolks, 2 tablespoons of cold water and the salt. Cook in a bain-marie for 10 minutes, continuing to stir. When the sauce is thick, add the white sweet and sour and pepper.
- Serve the cod fillet with the asparagus and salicornia, bacon and warm sauce.
