Most vinegars available for retail are mass-produced, made from inferior wine or other ingredients using techniques that save time, but sacrifice quality. We have picked some of the most honest vinegars of Italy, made with prime ingredients and care.

A good vinegar is not made in a hurry, the process takes time, being exposed to air for slowly. Once it has reached the right acidity some of it is drawn off and more wine (or other ingredient) can be added. This process can be repeated indefinitely. This is why “mothers” can be passed on for centuries.
