Sirk Della Subida - Aceto D'Uva - Italian Artisanal Wine Vinegar Made From Grapes - 3.4 fl.oz. (100ml)

  • This vinegar is made exclusively from local white grapes from the wine region Collio in Friuli Venezia Giulia. It is very rare to find a vinegar made from fresh grapes, usually vinegar is made from wine, and in most cases from bad wine.

The grapes used by Sirk are pressed and left to ferment in skin contact in wooden barrels in the Sirk family's small vinegar house. Once the alcoholic fermentation is naturally over, the acetic fermentation is inoculated with the "mother" vinegar yeast that has been passed on for generations throughout the family. Then the liquid is pressed, decanted and bottled. It is aged for 3 to 5 years and no other ingredients are added, the product is not diluted.

The Sirk family work very closely with the culture and territory they operate in. The vinegar production is only one of many amazing projects - there is a traditional trattoria, an amazing Michelin star fine dining restaurant, guest homes immersed in the nature and much more.

Taste Profile: The quality of the grapes, the slow process and the presence of noble molds convey to a very complex structure, persistency and great minerality.

Pairings: All salads, sauces, eggs, fish with high fat content, asparagus, very sweet desserts like meringues.
