This vinegar is made exclusively from local white grapes from the wine region Collio in Friuli Venezia Giulia. It is very rare to find a vinegar made from fresh grapes, usually vinegar is made from wine, and in most cases from bad wine.
The grapes used by Sirk are pressed and left to ferment in skin contact in wooden barrels in the Sirk family's small vinegar house. Once the alcoholic fermentation is naturally over, the acetic fermentation is inoculated with the "mother" vinegar yeast that has been passed on for generations throughout the family. Then the liquid is pressed, decanted and bottled. It is aged for 3 to 5 years and no other ingredients are added, the product is not diluted.
