300gr of horsemeat carpaccio
20gr chopped parsley
5 cloves of garlic
6 sage leaves
2 springs of rosemary
Lemon peel
Salt
Pepper
120gr extra virgin olive oil
4 tablespoons soy sauce
Smoked honey
Pollen

Giusti Balsamic Vinegar of Modena
Directions
For the sauce: mix 4 tablespoons of Giusti Balsamic Vinegar, garlic, sage, rosemary, lemon zest, soy sauce and parsley.
- Quickly blanch the horse meat and let the meat slices rest in the sauce for 48 hours.
- Serve the horsemeat carpaccio with sage, smoked honey, pollen and Giusti Balsamic Vinegar.
