We all know pesto is perfect on pasta and as a spread on sandwiches. This is an alternative, a great summery fresh and easy to make recipe.
3 TBSP Pesto - Pesto by Roi
1 Whole Cantaloupe, diced
1/2 Pound Feta Cheese, diced
2 TBSP Toasted Pine Nuts
3 TBSP Black Small Olives, diced - Olive Taggiasche Denocciolate by Roi
2 TBSP Extra Virgin Olive Oil - Roi Mosto Extra Virgin Olive Oil by Roi
1/2 Bunch Fresh Basil, torn
1/2 Bunch Fresh Mint, chopped
Mix all ingredients together in a bowl and serve chilled.
Tear the basil with your hands and don’t chop with a knife, the metal oxidizes it very quickly and will make it turn dark brown.
